Dragonfruit Nice Cream

Happy Hungry Journey Nice Cream is “nice,” because it has no dairy, so it’s easy on the stomach. Dragonfruit plays the starring role in your new colorful favorite dessert. Head to our post about Dragonfruit Smoothies to figure out how to tell the difference between red and white dragonfruit. Here, you obviously want the red ones!

Get ready to make the prettiest dessert in your freezer!

For Dragonfruit Nice Cream:

6-8 frozen bananas*

flesh from one red dragonfruit

4 tbsp almond butter

8 tbsp maple syrup

1 tsp vanilla

splash of coconut milk (This is merely to facilitate blending. Don’t overdo it, or else the mixture will get runny.)

1/2 tsp cinnamon

*Everyone has their own way of freezing bananas. We peel them before putting them in the freezer and always have a bunch of frozen bananas in the fridge in a large gallon-size Ziploc.

Cut dragonfruit in half and use a big tablespoon to scoop the flesh into the blender. Combine all ingredients in blender.

It’s oh so pretty on its own. Or…

… top with our Vegan Dulce de Leche, Homemade Chocolate Rawnola, buckwheat groats, hemp seed, or fresh shredded coconut. The rest can be frozen and maintains its fresh flavor for about a week.
