Dulce de Leche Overnight Oats

I can’t believe I’ve waited this long to blog about the miracle that is overnight oats! For those of us full-time workers, healthy eating can often feel like a super-human feat. Sunday meal prep is the key. Make four or five of these puppies to snag out of the fridge in the mornings on your way to work. If you have a microwave at work to warm them for 30 seconds, great. If not, I’ve eaten these cold and they are still very delicious. I get these cute mini-mason jars at Target. They are very cheap.

As always, the recipe I’m offering you is gluten-free and dairy-free!

For the overnight oats:

1/2 cup gluten-free oats (TJ’s has these in a convenient zip-top bag!)

2/3 cup coconut milk or almond milk (use more milk than oats, since the oats will soak it up!)

1/4 tsp vanilla

Cinnamon to your liking

*I don’t include any sweetener in this recipe like honey or maple syrup, since my Dulce de Leche topping has natural sweetness in it. If you don’t have time to make the Dulce de Leche, then you may want to add in 1 tbsp of your preferred sweetener.

 

Top with:

My Vegan Dulce de Leche  (it’s so freaking good! OMG)

Apple slices (yay autumn! apple season!)

Sprinkle of hemp seed for added protein

**If you have the time (and patience), it’s best to store only the oats, coconut milk, vanilla, and cinnamon in the jar overnight. Add these toppings on just before eating, and you’ll be happier. (But don’t get me wrong— the caramel also tastes great mixed in with the overnight oats!) This means having the foresight and planning (and nerve to carry a cute lunch bag in to work) to bring a bunch of tiny containers to your desk at work to entertain you during your morning emails!
