Cacao Bliss Bites

Everyone has been asking for this recipe lately from my Happy Soul Summer eBook— so here it is!
Let me just be honest here and announce that I require chocolate daily. I hardly consider a meal to be finished until I’ve had some form of chocolate, no matter how exquisite the meal. Here’s a healthy, quick, easy, and protein-packed way to go about that:
10 chopped dates
2 tbsp cacao powder
1 handful almonds
1 handful pecans
1 handful cashews
1 handful shredded organic coconut
1 tbsp maple syrup
1/2 tsp vanilla
Additional hemp seeds and shredded coconut for garnish
Blend together and form into bite-sized treats or use a mold to make your favorite bar shape. Roll on a cutting board or on top of parchment paper to coat with garnishes.
Yields about 20 chocolate bites.
I served these on mini-cupcake wrappers for the Mothers’ Day event at Ivivva at Stanford shopping mall.
*Note: I use a Ninja blender for this. Ninja blenders leave things more coarse / crunchy than if you use a different machine. My friend Jeanne of Soul Food Salon made this recipe in her mini food processor with a few suggestions for easier blending if you are not using a Ninja- use 8 dates and add a tiny bit of water. This yields about 8 bites. Thanks Jeanne!
