Vegan Dulce de Leche Fruit Dip

This one is a favorite among the girls who do my Happy Hungry Summer teen yoga and cooking retreats. This dip violates my rule of not cooking something two summers in a row, since the girls who did both summers 2016 & 2017 demanded that we made it again! I didn’t put up much of a fight, since it’s so easy!

Serve with fresh fruit or on top of your favorite nice cream!

It’s amazing how simple it is!

8-10 dates, pitted

4 tbsp almond butter

6 tbsp maple syrup

2 tbsp coconut milk

Combine first three ingredients in blender. Add coconut milk gradually to facilitate blending. You don’t want it watery!

It makes an awesome topping for any kind of vegan ice cream— it is served here on top of my Dragonfruit Nicecream (recipe for Dragonfruit Nicecream coming soon)!
